Oat Bran Muffins


Great Recipe:

2 c. Oat Bran
1/4 c. firmly packed brown sugar
2 tsp. baking powder
1/2 tsp. salt

1 c. milk (I used 1%)
2 egg whites, slightly beaten
1/4 c. honey or molasses (I used Honey)
2 Tbsp. vegetable oil

Heat oven to 425. Spray bottoms only of muffin tin with no-stick cooking spray. Combine dry ingredients; mix well. Add combined milk, egg whites, honey and oil; mix just until moistened. Fill prepared muffin cups 3/4 full. Bake 15 - 17 minutes or until golden brown. Yield: 1 dozen

These were great just plain. I planned to take a picture, but the muffins disappeared before I was able.
